I have had an Instant Pot since they first came out…I bought it because I was looking for an alternative to the traditional Crock Pot which leaches lead. At that time, the only thing I knew how to make in a crock pot was chili, stew and Kalua Pig. 

However, as the Instant Pot grew in popularity, I finally figured out how to use the thing! And now there are so many options, but I really love my pot in the fall! 

In this post, I am going to share some of the best Healthy Instant Pot recipes for Fall that I have found! Let me know what you think!

Instant Pot Fajitas

Come on…Don’t these fajitas look delicious?? These cook in just 10 minutes and this is a dish that the entire family will love! Toast some corn torillas and serve these delicious fajitas…so good!

These are great for weeknight dinners, but they would also be delicious at a party! Layout the tortillas and let guests make their own. It will definitely be a crowd pleaser! 

Instant Pot Potatoes

With all the healthy instant pot recipes I am about to share with you, you may be looking for a side dish. Well, here you go! These delicious instant pot potatoes will save you a ton of time and are just as delicious as the main dish!

Sticky Maple Ginger Rice Noodles

Now, this is a new one, even for me…lover of all Asian noodles! But it looks delicious! With the sweetness from the Maple Syrup, I know the kids would enjoy this one. It also has a hint of spice which I would leave out unless the kids can handle spice. 

The adults can just add it in on their own dishes!

This is a Vegan dish but you could also try adding in some chopped chicken! 

Instant Pot Burrito Bowl

My family loves Burritos, but one of the kids can’t eat wheat! So all he has left are corn tortillas which are not a favorite…Typically I will make his burrito into a bowl and then bake the corn tortillas into chips for him.

But this recipe is an even better option! And the best part is that you can achieve an entire meal all in your Instant Pot!

Instant Pot Meatloaf

Meafloaf has gotten a bad rep over the years. But I never understood why. When done correctly (and not smothered in ketchup!) it can be delicious and an easy weeknight dinner. 

This Instant Pot recipe is no exception!

One thing I struggled with when I first started using the Instant Pot was knowing just how long to cook chicken to keep it from falling apart. Well this recipe will show you how to cook chicken perfectly!

When I used to make these types of dishes (with beans) my kids would complain the whole time! But then we taught them the bean song…Beans, Beans the magical fruit… I think you know the rest! 

But that was the game changer for us. Now they get excited when they see beans, LOL!

When I started collecting recipes for this post, I really wanted to focus on different kinds of meals. However, as I really got into it, I found so many soup and stew recipes that I wanted to include!

They look delicious and there is enough of a variety to give them their own section! Below you will find delicious soup and stew recipes, all made in the instant pot! 


Instant Pot Beef Stew

This Instant Pot Beef Stew is a classic for a reason! Picture yourself coming home from work on a cold fall night and being greeted by the smell of beef stew cooking!

Use some grass fed beef to step it up a notch! Even though beef stew is traditionally made with carrots, celery and tomato, just use what you have on hand! Think sweet potatoes, bell peppers, zucchini and parsnips for starters! 

Instant Pot Chicken Soup

So, unfortunatley we know that fall is the beginning of cold and flu season. School is starting and the cold weather is moving in. It has been proven that chicken soup actually does help make a cold better!

Instant Pot Vegetable Soup – With Pesto

Now this is a dish I have never seen before! This is a vegetable soup made with pesto – Genius! Little kids love this soup too, so give it a try tonight!

If you want to make this a clean recipe, replace the shell noodles with either whole wheat noodles or chickpea noodles (our favorite!). 

Instant Pot Vegetable Soup With Barley

When I think of vegetable soup, I think of of the canned stuff that has random vegetables floating in a red soup. If that is the same image you have in your mind, this soup recipe will quickly open your mind to something new and delicious!

This recipe uses barley to add some substance, and of course it has fresh vegetables. Give it a try and you’ll never look back! 

Instant Pot Chili Mac Recipe

This instant pot chili mac recipe is delicious on a cold winter night! Just put it all together and come home to a one-pot meal! The kids will love this one too!

Instant Pot Chickpea Noodle Soup

This Instant Pot Chickpea Noodle Soup recipe is delicious and easy! You do need to chop and saute the vegetables before letting it sit, but it is so worth it!
