Berry Healthy Donuts – Clean Eating Recipe

Who doesn’t love donuts? They are definitely one of my weaknesses so I knew I had to come up with a recipe for healthy donuts. I’m not going to lie, these do not taste like real fluffy, melt in the mouth donuts. But they are delicious and they have the same shape, LOL! The sweetness from the berries and maple syrup are enough to satisfy your sweet tooth. The best part is that they won’t leave you with a sugar rush – or crash.

The kids enjoyed these too and they pack perfectly in a lunchbox. No Ice pack needed.

Oats and Chia Seeds

Instead of traditional flour, this recipe uses oats. By grinding oats in a blender, you can make your own oat flour. Oat flour is high in fiber and it boosts your heart health. Because of the high fiber content, it also keeps you fuller longer.

Chia seeds are everywhere these days, but I was never a big fan. i just can’t stand the gelatinous texture. But I do like baking with it because it adds a different, denser consistency to baked goods. Chia seeds are also high in Omega 3’s, protein and fiber. They are also loaded with vitamins and minerals.

Ingredients- Healthy Donuts

  • 5 cups oats (gluten free if necessary)
  • 2 tablespoons chia seeds
  • 5 teaspoons baking powder
  • 2 tablespoons coconut flour
  • 1 cup frozen berries
  • 2 tablespoons coconut oil
  • 1 teaspoon nunaturals vanilla stevia (If you don’t have nunaturals use ½ teaspoon vanilla extract and one packet of stevia)
  • 2 tablespoons almond butter
  • 1/3 cup pure maple syrup
  • 1 egg

The Recipe

in a powerful blender, grind the oats into a flour being sure to leave some oats intact for texture.

Pre heat the oven to 350 degrees.

In a large bowl, combine the oats, chia seeds, baking powder and coconut flour in a bowl.

In a microwave safe dish, heat the berries and coconut oil until berries are mostly thawed.

Use a fork to mash the berries until chunky.

Whisk together the stevia, almond butter and maple syrup.

Pour the syrup mixture into the dry mixture and stir.

Add in the berry and oil mixture and mix until coated. Finally, add in the egg and whisk until everything is sticky.

Let sit on the counter for 6-10 minutes (this allows the chia seeds and coconut flour to absorb the liquid and helps bind).

Prepare your donut tray. Portion the mixture into the donut tray and bake for 12 minutes.

Rotate the pan and bake for 6-7 more minutes.

Remove from the oven and let cool for forty five minutes in the tray before removing.
