Sliced carrots slathered in a honey-garlic sauce, roasted until golden brown, and served warm make these honey-glazed roasted carrots a delicious addition to your dinner rotation. Honey glazed carrots are an inexpensive dish that can be served as part of an easy weeknight dinner or at a party with a table full of guests!

This recipe uses 6 simple ingredients that you already have at home and cooks in about 20 minutes.

In this honey-glazed carrots recipe, we use honey in place of the brown sugar that is traditionally used. Brown sugar was used to add depth and sweetness to the dish, but the combination of garlic and honey does the same thing without being overly sweet.

This dish tastes delicious as it is, but if you want to add another layer of flavor, sprinkle in some red pepper flakes or cayenne pepper for a little spice! It pairs well with the honey glaze!

I love serving glazed carrots with oven-baked ribs. While the ribs are finishing on the grill, pop these carrots in the oven, and in no time, an amazing dinner will be ready.

How Long Do Carrots Last in The Fridge?

Carrots can last up to 3-4 weeks in the refrigerator.

One of my favorite things about carrots is that they last forever in the fridge! This means I can have them on hand at all times. After we eat through all of the perishable veggies in the fridge, carrots are my go-to for dinner.

Can You Make Honey Glazed Carrots the Day Before?

You sure can! These honey-glazed carrots reheat well the next day. If you want to prep these ahead of time, there are two options:

  1. Follow the recipe and cook the carrots until tender. Let them cool completely and then store them in an airtight container in the refrigerator. When it is time to serve them, microwave them and then pour them into a serving dish and serve immediately.
  2. Freezer Meal Prep – Prepare the carrots per the recipe. Let them cool completely and then place them in an airtight container and freeze them. When it is time to serve, let them defrost completely. Microwave until warm and serve in a serving dish.

INGREDIENTS YOU NEED

  • Carrots – Whole carrots are recommended, but you can also use baby carrots. They may take a bit longer to cook and can sometimes get mushy.
  • Honey Since we will be roasting the carrots, don’t use raw honey or it will be a waste. You can substitute maple syrup but it will dramatically change the flavor. Maple syrup is sweeter than honey, so I would recommend using half as much.
  • Garlic – Fresh garlic is best but you could also substitute garlic powder.
  • Ground Cinnamon – It adds a flavor that you can’t quite put your finger on.
  • Salt
  • Olive Oil – You can substitute avocado oil
  • Fresh Herbs – This is optional but it can really take the dish to the next level! Try fresh thyme, oregano, or rubbed sage

Step-By-Step Instructions

Important Tips For Honey Glazed Carrots

  • Cut the carrots into uniform bite-sized pieces. Having them all about the same size ensures that they cook evenly. Smaller carrots may cook quicker than larger pieces.
  • More Garlic is not better in this recipe. The carrots have a mild flavor, so too much garlic will overpower the carrots and may become bitter.
  • When mixing the ingredients, use a large bowl. A large bowl makes it easier to mix all the ingredients without having anything fall onto the counter.

Frequently Asked Questions About Honey Glazed Carrots

Are glazed carrots healthy?

They can be! In this recipe, there is no refined sugar so it is healthier than some other recipes. If you want to cut back on the sugar, you can add less honey. Carrots are full of vitamins and minerals so it’s beneficial to eat them.

Do you have to peel carrots?

If you scrub the outside of the carrots very well, you do not have to peel the carrots. If serving glazed carrots to guests, I would definitely recommend peeling them, just because they look more presentable when peeled.

Can you freeze honey-glazed carrots?

You sure can! When I make this recipe, I will freeze half for another night. Let it cool to room temperature and then store it in an airtight container in the freezer. When ready to use, defrost the carrots and reheat them in the microwave.
