This Veggie Patties recipe is a great way to get your entire family to eat their vegetables. They’re pan fried, cook up quickly, and are delicious!
Our container vegetable garden was a huge success this year, which resulted in this clean eating recipe for veggie patties! We have tried growing veggies in prior years but I always forgot to water the plants and they would dry up.
This year, I was determined to take proper care of our garden with the goal of cutting back on our vegetable grocery bills! On a side note, I’m not sure that we saved any money by growing our own. After building the vegetable planter boxes, buying pots and organic soil, we spent quite a bit! Anyway, back to the Vegetable Patties.
We did end up with an abundance of zucchini and other veggies, which was awesome. After a few weeks of eating sauteed zucchini, we needed to figure out more creative ways of eating them before they went bad.
I came across a German Potato Pancake recipe, and we love potato cakes, so I knew we would like it. I thought…what if I add zucchini? Zucchini doesn’t add any flavor to a dish so it’s easy to incorporate. Zucchini are also packed with vitamin C, so they are good for you!
Veggie Patties Recipe
As you can probably guess, the addition of zucchini is delicious! I’ve made several adjustments over the years and this is now one of our family favorite clean eating recipes.
The kids eat their veggie patties with ketchup and my husband and I eat them plain. The veggie patties recipe is really healthy, and they are also good with Greek yogurt and fresh lemons.
Ingredients in the Veggie Patties Recipe
- 3 cups of grated vegetables (potatoes, zucchini, carrots or finely chopped broccoli)
- 1/4 cup finely chopped onions
- 2 eggs
- 2 tablespoons whole wheat flour
- salt and pepper
In a large bowl, combine the grated vegetables, chopped onions, eggs, and whole wheat flour. Add salt and pepper to taste
Add Olive oil to a hot skillet
Drop the batter into the oil and fry on each side for 3-4 minutes or until brown

Ingredients
- 3 cups vegetables (potato, zucchini, carrots or finely chopped brocolli) shredded
- 1/4 cup onions finely diced
- 2 eggs beaten
- 2 Tbsp Whole Wheat Flour
- salt and pepper
Instructions

in a large bowl, mix all ingredients

Heat olive oil in a skillet

Add batter to the skillet in 2 inch patties

Fry on each side for 3-4 minutes or until brown

Enjoy! Serve with greek yogurt and fresh lemon juice, or eat as-is!
