  • 2 Cups Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 1/2 cup Butter Alternative - I used Miyoko's Vegan butter you can also used unsalted butter if you are not avoiding dairy
  • 1/4 cup Maple Syrup
  • 1/4 cup Honey
  • 2 tablespoons ground flax seed mixed with 6 Tbsp Water
  • 2 teaspoons pure vanilla extract
  • 3-4 mashed bananas brown ones are better


  1. Preheat oven to 350 degrees and grease a 9×5 glass pan.

  2. in a medium mixing bowl, mix the flour, baking powder, baking soda, cinnamon and salt

  3. In a large bowl, mix the butter alternative, maple syrup, honey, flax & water mixture and vanilla. Mix until well blended. Mix in the mashed bananas

  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix or the bread will be dry.

  5. Pour the batter in to the greased pan and bake for 55 minutes or until set.

  6. Let cool at least 1 hour or overnight.
