Weekends are for grocery shopping in our house. This means that by the time Thursday and Friday roll around, we are running low on fresh vegetables. that’s when we need to get creative!
This recipe is great for those nights when there just isn’t a lot of time to get dinner on the table.
- 1 pound ground chicken or turkey OR 2 Chicken Breasts, cut into chunks
- 1 Onion, chopped
- 2 Garlic cloves, chopped
- 1 Bag of Spinach, chopped
- 1/2 box of Mushrooms, sliced
- Liquid Aminos, to taste
- 1 Tbsp Sesame Oil
If you are using ground chicken, you can skip to the next step. Put the chicken breasts in the blender and pulse until it looks like ground chicken
Chop the Onion, Spinach, Mushrooms and Garlic. Garlic was an afterthought when I made this, but everything is better with garlic!
Heat 2 Tablespoons of Olive Oil in a skillet. Add the ground chicken, onions and garlic and saute until the Chicken is brown
Add the Spinach and mushrooms and turn off the heat.
Mix in the Liquid Aminos and Sesame Oil. Serve and Enjoy!
My husband and I ate this with a side of salad and Beet Hummus. The kids ate this with brown rice and quinoa. A win for everyone!
