Here in Seattle, the summer is starting to fade away and it’s obvious that Fall is going to be here any day, meaning rain and cold. But until then, I am holding on to the last days of summer. One of my favorite summer dishes is Mango Salsa.
I had just picked up a bunch of tomatoes with the idea of making some salsa. But once I started chopping, I realized I was out of mangos. However, I did have a bunch of frozen strawberries. So I decided to try making this Strawberry Salsa clean eating recipe.
This recipe is so easy to make! It only takes 5 ingredients (6 if you want to add jalapenos). The salsa can be eaten the same day but tastes the best the next day! The most time consuming part is all the chopping!
Strawberry Salsa Clean Eating Recipe
- 1 Onion
- 4 Tomatoes
- 7 Strawberries
- 1 Lime, Juiced
- 1 Bunch Cilantro
- 1/4 cup Olive Oil
- Jalapeno (optional)
Chop up Onion, Tomatoes and Strawberries. They should be cut in uniform sizes.
If using frozen strawberries, defrost them first and then chop:
Mix the chopped tomatoes, chopped onions, chopped strawberries and lime juice in a medium bowl. Tear the cilantro into the bowl. Add the Olive oil and salt and mix well.
Mix well and serve! For best results, let it sit overnight. Enjoy!
