Ingredients

Brine

  • 1 whole turkey about 18 pounds, neck and giblets removed

  • 4 quarts cold water

  • 2 large onions chopped and divided
  • 4 carrots coarsely chopped and divided
  • 4 celery stalks chopped and divided
  • 3 sprigs fresh rosemary divided
  • 1 lemon quartered
  • 1 head garlic halved horizontally
  • 1 bay leaf
  • 1 cup dry white wine
  • Freshly ground black pepper to taste

Instructions

Step 1: Brine the Turkey

  1. In a large stockpot, stir together the sea salt, brown sugar, and cold water until dissolved. Submerge the turkey in the brine, cover, and refrigerate for 12 hours or overnight. This step guarantees a juicy, flavorful turkey.

How to keep turkey juicy when roasting

There are several methods (which are covered in the post above). The most popular and classic way is to cook the turkey breast side down and then flipping it over during the end to brown the turkey. My favorite option is to use a cheesecloth on the breast as it cooks. Both methods will work!

Best way to brine a turkey for Thanksgiving

Do you cover turkey when roasting?

It’s not necessary but it can be helpful to tent foil over the top if it starts to brown too early. We need the turkey to be cooked thuroughly before it starts to brown or it may end up burning. Tenting foil over the top is a great way to keep it from browning too soon
