The Best Clean Eating Peanut Butter Cookie Recipe

You know those days when you are trying really hard to eat healthy but you just want a sweet treat? Well I have got something for you!

These healthy peanut butter cookies have no refined sugar. To make it clean eating compliant, we use white whole wheat flours…so you can definitely call them healthy 😉

Do you remember when we the mall was the place to be? Now, do you remember the smell of those delicious, soft, fresh makes cookies? I used to love walking by and taking in the smell!

Now days my childhood mall may not be as crowded as it was in its haydays, but when you walk in, you can still smell the delicious freshly baked cookies!

And now, my kids eyes light up too!

I rarely bought cookies, but when I did, it was one of my favorite desserts!

That is just one reason that this peanut butter cookie recipes is so special to me. They are healthier than what you buy in the store, but soft and chewy, just like those mall cookies!

Try a batch and I know you will feel the same way.

Which Peanut Butter Is best for cookies?

The best part about peanut butter cookies is that you can get away with a lot and they still turn out delicious!

In this recipe, the type of peanut butter you use is a matter of personal preference. I prefer creamy peanut butter because I feel it makes the chocolate chips really pop.

But if I am omitting the chocolate chips, I like to use crunchy because it adds some texture to the cookie!

You could even use almond or cashew butter if that’s all you have on hand!

Should you refrigerate peanut butter cookie dough before baking?

Traditional peanut butter cookie dough can benefit from being chilled before baking because it helps to keep the dough from spreading. When using room temperature butter, the cookie will start melting as soon as it feels the heat.

By cooling the dough, the butter had time to harden and then holds it’s shape longer once in the oven.

With this cookie recipe, the white whole wheat flour creates a denser batter and helps the cookie hold it’s shape. Because of that, you can refrigerate the dough but it is not required.

How To Make Homemade Peanut Butter Cookies?

Unlike other healthy recipes, these cookies are very easy to make. It really is just a matter of adding everything and mixing well. You can’t overmix these either!

We like to add in mini chocolate chips when we are feeling crazy too. If you choose to add chocolate chips too, just gently mix them into the batter before placing them on the cookie sheet.

This is a great cookie recipe for beginners or kids too.

Ingredients

  • 1 1/4 cup white whole-wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup peanut butter
  • 3/4 cup pure maple syrup
  • 1/2 cup 1 stick of butter
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup mini chocolate chips or chopped peanuts optional

Instructions

  1. Preheat oven to 325 degrees
  2. In a medium bowl, whisk together the flour, baking soda and salt
  3. In a standmixer, mix the peanut butter, maple syrup, butter, egg and vanilla extract. Slowly add the dry ingredients, blending just until mixed. Do not overmix
  4. Fold in chocolate chips, if using
  5. Drop by spoonful on a cookie sheet. bake until golden brown. About 15 minutes.
  6. Cool and serve

    YUM! I love easy recipes that aren’t terrible for me! This pregnancy I’ve found myself in a pickle more than once regarding a lack of sugary treats in the house! This will make for a great backup!

  2. This recipe sounds so good! I’d love to try it out. Can you replace the flour with coconut flour? I have been eating clean for a while now, avoiding grains, so flour is a no-no for me. 🙂

    • I will try coconut flour next time and let you know! You can definitely use coconut flour, I just want to see if it would require redding the wet ingredients. I’ll let you know!

  3. I worry about the taste of the wheat flour because I tried wheat pasta and could just about gag at the thought of doing that again LOL. Can you taste the difference? I might have to try these and make my kids test them out first lol

    • Lol, wheat flour is definitely an acquired taste. I use white whole wheat flour which has a mild flavor. It is much closer to all purpose flour but it is denser so it requires more liquid. I think you would like it!

    The recipe sounds great! I think I should give it a try. I love cookies badly (crunchy and sweet, I sometimes need it desperately!) I never tried one with peanut butter, I am cooking it soon enough!

  10. Does whole wheat flour taste different? I am always willing to try next recipes, but I hate sacrificing taste. I do love the idea of maple syrup in them. Yummy!
