It seems that no matter how much I meal prep, there are always mornings where nothing sounds good for breakfast and I really just want to relax for 10 minutes before the rest of the family wakes up.

That’s when these frozen breakfast burritos come to the rescue. I take a few out of the freezer, cover them with a damp paper towel and microwave them until they are warmed all the way through.

If you haven’t tried freezer meals before, you don’t know what you are missing. Think about how easy it is to grab a frozen meal out of your freezer, microwave it and have a meal in minutes. Freezer meals are the exact same thing, except you are eating quality meals with ingredients that you know and love.

If you already use freezer meals, add these freezer-friendly breakfast burritos to your list of options! They are quick and easy to make, you can use any ingredients you have in the fridge and they reheat beautifully!

How Do You Freeze Breakfast Burritos So They Don’t Get Soggy?

There are two tricks to prevent soggy burritos:

  1. After making the egg mixture, let it cool to room temperature before adding them to the tortilla. If you add it while they are still hot, they will soften the tortilla and create condensation on the inside of the wrapper. This will make it soggy before it is ever frozen.
  2. When defrosting the burrito, remove any wrappers from the burrito and cover with a damp paper towel. The towel will keep the tortilla from drying out and will also allow any moisture to be released as it heats up.

INGREDIENTS YOU NEED

  • Tortillas – I prefer whole wheat tortillas because I find them more filling, but you could use flour tortillas
  • Eggs – The number of eggs you use will depend on how full you want your freezer burritos and how many you will be making.
  • Sausage – Any sweet or savory sausage will work in this recipe but I highly recommend Teton sausages! You could even use homemade breakfast sausage patties!
  • Onion – Onions are optional but they taste amazing in this dish
  • Green or Red Bell Pepper – For a pop of color and some flavor!

Make it your own: Add anything you have in the fridge. You really can’t go wrong with this recipe! Try adding cooked bacon, black beans, shredded potatoes, mushrooms, garlic or even canned black beans.

How To Make Freezer Breakfast Burritos

Prepare the ingredients by dicing the onions and bell peppers, chopping the sausage into bite-sized pieces, and whisking the eggs with a pinch of salt

Continue to cook until the eggs are thoroughly cooked. Then wrap the burritos (see below on how to wrap them)

How To Roll A Burrito

Before I show you how I prefer to roll a burrito, know that this is my style. Most people like to fold in the sides first, but this is what I find easier. Do what works for you!

How To Freeze Breakfast Burritos To Prevent Freezer Burn

  • The best way to prevent freezer burn is to keep the air off the burrito. That means they should be stored in an airtight bag or container. If you don’t have an air-tight container, wrap the burritos in plastic wrap and put them in a freezer bag
  • If you will be eating the burritos within a month, you can place the rolled burritos on a sheet pan and place it in the freezer. Once the burritos are frozen, place them in a freezer bag and squeeze out the air
  • Label your bag with the date you froze them, and the date 3 months from then. They should be eaten within 3 months for freshness.
  • To reheat the burritos, cover the burrito with a damp napkin and microwave for 40 seconds per side.

Important Teaching Tips

  • The egg mixture should be cooled to room temperature before you start rolling them to prevent soggy tortillas. This can take anywhere from 20-30 minutes.
  • If the tortillas are stiff or start to tear while you are rolling them, microwave them for 10 seconds just to soften them. Don’t warm them up any longer or they may create soggy burritos.

Ingredients

  • 10 eggs
  • 8 Tortillas, Taco sized
  • 3 Sausage links cut into bite sized pieces
  • 1/2 Cup Diced Bell Peppers
  • 1/4 Cup Diced Onions
  • 1/2 teaspoons Salt
  • Olive Oil

Instructions

  1. Crack the eggs into a medium bowl and add the salt. Whisk for 30 seconds
  2. Heat Olive Oil in a medium saute pan
  3. Add the onions and bell pepper and saute until they start to soften; about 1 minute
  4. Add the sausage and saute for 3-minutes until it starts to brown
  5. Add the eggs and cook until the eggs are cooked through. Let the egg mixture cool for 30 minutes
  6. Place a tortilla on a plate and add 1/8 of the egg mixture to the middle of the tortilla
  7. Wrap the tortilla and place aside
  8. Repeat with the remaining wrappers
  9. Place the burritos on a sheet pan and freeze for 3 hours or overnight. Place the burritos in a freezer bag and place in the freezer
